Tomato Soup
Ingredients
- 1 each Onion Chopped
- 1 T Vegan Butter
- 2 lbs. Plum tomatoes seeded and quartered (or 5 romas plus one can of stewed tomatoes)
- 3 C Vegetable Broth
- 8 oz Tomato Sauce
- 1 T Fresh Basil Minced
- 1 dash Pepper
Option
- 2 cans Diced Tomatoes (One can should be spicy!)
- 2 each Heirloom Tomatoes
Instructions
- In a large saucepan, sauté onion in butter until tender. Add the tomatoes, broth, tomato sauce, basil, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 30 minutes. Cool slightly.
