Grandma's Peanut Brittle
Ingredients
- Cooking spray
- margarine
- 3 C sugar
- 1-½ C water
- 1 C white corn syrup
- 2 C raw peanuts
- 1 t vanilla
- ½ C butter
- 1 T baking soda
Instructions
- Spray cookies sheet with cooking spray then smear with margarine. Coat several knives with margarine.
- Combine sugar, water, and corn syrup in large sauce pan and cook over medium-high heat ON THE GAS BURNER, stirring constantly to 260°. Just before temperature reaches 260°, reduce heat to medium and add peanuts and ½ C margarine. Stir constantly until mixture reaches 290°. Remove from heat and add vanilla, butter, and baking soda. Stir well.
- Pour hot mixture in “blobs” onto greased cookie sheet. Use knives to stretch candy. Starting at edges and keep working, sliding knives under candy to make sure that nothing sticks. Pull candy very thin.
- 260° - 20 minutes
- 290° - 5 minutes
