Spicy Tomato Chutney

- 2 T Oil
- 6-7 Garlic Cloves
- 3 Dried Red Chilis
- 1 Green Chilis
- 1 inch Ginger chopped
- 6 Tomatoes chopped
- 1 t Salt
Tadka
- 1 T Oil
- ½ t Mustard Seeds
- 1 T Garlic chopped
- 2 Dried Red Chillies
- 6-7 Curry Leaves
- 2 t Red Chili Powder
Instructions
- Heat oil. Add the garlic, the chilis, and the ginger. Saute for thirty seconds. Then add the tomatoes, and salt. Adjust salt to taste. Cover and cook for 7 or 8 minutes or until the tomatoes have softened.
- After the tomato mixture has cooled, blend until a paste forms.
Tadka
- Heat oil. Add mustard seed and cook until they crackle. Add the chopped garlic, dried chilis, curry leaves, and chili powder.
- Add the tomato mixture. to the tadka. Cool and serve.
