Spicy Tomato Chutney

Ingredients
  

  • 2 T Oil
  • 6-7 Garlic Cloves
  • 3 Dried Red Chilis
  • 1 Green Chilis
  • 1 inch Ginger chopped
  • 6 Tomatoes chopped
  • 1 t Salt

Tadka

  • 1 T Oil
  • ½ t Mustard Seeds
  • 1 T Garlic chopped
  • 2 Dried Red Chillies
  • 6-7 Curry Leaves
  • 2 t Red Chili Powder

Instructions
 

  • Heat oil. Add the garlic, the chilis, and the ginger. Saute for thirty seconds. Then add the tomatoes, and salt. Adjust salt to taste. Cover and cook for 7 or 8 minutes or until the tomatoes have softened.
  • After the tomato mixture has cooled, blend until a paste forms.

Tadka

  • Heat oil. Add mustard seed and cook until they crackle. Add the chopped garlic, dried chilis, curry leaves, and chili powder.
  • Add the tomato mixture. to the tadka. Cool and serve.
