Vegan Ricotta

Ingredients
  

  • 1 bunch Spinach
  • 1 lb Firm Tofu
  • 1-½ t Sugar
  • C Soy Milk
  • ½ t Garlic Powder
  • 1 T Lemon Juice
  • Basil

Instructions
 

  • Cook the spinach and squeeze dry as possible. Set aside.
  • Place the tofu, sugar, soy milk, garlic powder, lemon juice, and basil in a food processor or blender and blend until smooth. Stir in the spinach and blend again.
