Thai Curry Tofu – Ⓥ

Thai Curry Tofu

Ingredients
  

  • 7 oz Tofu
  • 2 T Canola Oil
  • 1 Small Onion sliced
  • 2 T Fresh Ginger minced
  • 6 cloves Garlic minced
  • 2 T Thai Red Curry Paste
  • 1 Can Coconut Milk,
  • 2 T Light Brown Sugar
  • 1 T Vegan Fish Sauce
  • Red Bell Pepper Sliced
  • Yellow Bell Pepper Sliced
  • Broccoli florets
  • 1 Jalapeño sliced
  • Fresh Basil and Scallions for Garnish chopped

Instructions
 

  • Saute tofu, and set aside.
  • Saute the onion about 4 minutes. Add the ginger, garlic, and curry paste. Cook until fragrant, about 2 minutes.
  • Stir in the coconut milk, brown sugar, and vegan fish sauce until smooth. Bring to a boil. Reduce heat and simmer for 2 minutes. Stir in the bell peppers and add the tofu. Cover and simmer about 20 minutes. Stir in the brocalli and scallions.
  • Serve over Basmati rice.
