Thai Curry Tofu
Ingredients
- 7 oz Tofu
- 2 T Canola Oil
- 1 Small Onion sliced
- 2 T Fresh Ginger minced
- 6 cloves Garlic minced
- 2 T Thai Red Curry Paste
- 1 Can Coconut Milk,
- 2 T Light Brown Sugar
- 1 T Vegan Fish Sauce
- Red Bell Pepper Sliced
- Yellow Bell Pepper Sliced
- Broccoli florets
- 1 Jalapeño sliced
- Fresh Basil and Scallions for Garnish chopped
Instructions
- Saute tofu, and set aside.
- Saute the onion about 4 minutes. Add the ginger, garlic, and curry paste. Cook until fragrant, about 2 minutes.
- Stir in the coconut milk, brown sugar, and vegan fish sauce until smooth. Bring to a boil. Reduce heat and simmer for 2 minutes. Stir in the bell peppers and add the tofu. Cover and simmer about 20 minutes. Stir in the brocalli and scallions.
- Serve over Basmati rice.
