Warm Wild Mushroom Salad

Ingredients
  

  • 4 T olive oil
  • 2 T basalmic vinegar
  • ½ t dried thyme
  • Assorted wild mushrooms sliced
  • ¼ shallots
  • 2 T minced chives
  • Assorted greens

Instructions
 

  • Wisk 2 T olive oil, vinegar, and thyme in a small bowl to blend.
  • Heat 2 T olive oil in skillet over medium-high heat. Add mushrooms and shallots. Sauté until mushrooms are tender, about 5 minutes. Summer until juices evaporate. Mix 2 T of dressing and chives into mushrooms. Season with salt and pepper.
  • Toss greens with remaining dressing and top with mushrooms.
