Warm Wild Mushroom Salad
Ingredients
- 4 T olive oil
- 2 T basalmic vinegar
- ½ t dried thyme
- Assorted wild mushrooms sliced
- ¼ shallots
- 2 T minced chives
- Assorted greens
Instructions
- Wisk 2 T olive oil, vinegar, and thyme in a small bowl to blend.
- Heat 2 T olive oil in skillet over medium-high heat. Add mushrooms and shallots. Sauté until mushrooms are tender, about 5 minutes. Summer until juices evaporate. Mix 2 T of dressing and chives into mushrooms. Season with salt and pepper.
- Toss greens with remaining dressing and top with mushrooms.
