Brownie Baked Alaska
Ingredients
- 2 pints ice cream softened (strawberry or peppermint)
- 1 package of brownie mix
- 4 eggs separated
- ½ C sugar
Instructions
- Pack ice cream into bowl lined with wax paper. Freeze until firm.
- Prepare brownies following directions for cake-like brownies and remove from pan. Chill brownies in freezer for 1 hour.
- Preheat oven to 500º
- Remove ice cream from bowl and invert on brownie.
- Beat 4 egg whites until foamy. Gradually add sugar until stiff peaks form. Spread meringue evenly over ice cream and bake for 3 minutes until meringue is lightly brown. Cut into wedges with a knife dipped in warm water and serve.
